A Cozy Fall Double-Date Dinner: Three Courses Made Simple

Crisp evenings call for comfort food and good company. Since changing jobs earlier this year, I’ve found myself missing the easy lunches and hallway chats I used to share with friends. My favourite way to stay connected now is by hosting little dinner parties; low-key evenings where we can catch up, laugh, and linger over a meal.


This easy three-course menu feels special but won’t keep you in the kitchen all night. Light a few candles, pour sparkling cider or a favorite wine, and let the cozy evening unfold.

Produce

  • 2 cups baby spinach

  • 1 cup marinated artichoke hearts (drained and chopped)

  • 1 large yellow onion

  • 2 medium carrots

  • 2 celery stalks

  • 1 head garlic

  • 2 lbs russet potatoes

  • 2 green onions (optional garnish)

Dairy & Protein

  • 1 lb ground turkey

  • 4 oz cream cheese (for dip)

  • 4 oz goat cheese or ricotta (for dip creaminess)

  • 1 cup shredded mozzarella

  • ½ cup grated Parmesan

  • 8 oz cream cheese (for cheesecake filling)

  • ½ cup Greek yogurt or sour cream

  • ½ cup unsalted butter

  • ½ cup milk or half-and-half

Pantry & Baking

  • 1 baguette or rustic bread (for dip and crostini)

  • 3 tbsp olive oil

  • 1 cup chicken or vegetable broth

  • 3 tbsp all-purpose flour

  • 1 tsp dried thyme

  • ½ tsp smoked paprika

  • Salt and pepper

  • 1 cup canned pumpkin purée

  • ¼ cup maple syrup

  • 1 tsp vanilla extract

  • ½ cup granulated sugar

  • 1 tsp pumpkin pie spice

  • About 1 cup crushed gingersnaps or graham crumbs


🥂 Course One: Warm Spinach & Artichoke Dip with Rustic Bread

Serves 4

Instructions

  1. Preheat oven to 375 °F (190 °C).

  2. In a skillet, sauté chopped onion in 1 tablespoon olive oil until soft. Add spinach and cook until wilted. Stir in chopped artichokes.

  3. In a bowl, combine cream cheese, goat cheese or ricotta, half the mozzarella, Parmesan, and a pinch of salt and pepper. Fold in the warm spinach-artichoke mixture.

  4. Spread into a small baking dish. Top with remaining mozzarella.

  5. Bake 20–25 minutes until bubbly and golden.

  6. Serve hot with slices of toasted baguette or rustic bread.


🥘 Course Two: Turkey & Garlic Mashed Potato Shepherd’s Pie

Serves 4

Instructions

  1. Roast the garlic: Wrap the head of garlic in foil and roast at 400 °F (200 °C) for 30 minutes.

  2. Garlic mash: Boil peeled potatoes until tender. Squeeze roasted garlic into the pot, add butter, milk, salt, and pepper, and mash until creamy.

  3. Filling: Sauté diced onion, carrots, and celery in olive oil until soft. Add ground turkey and cook until browned. Stir in flour, then add broth, thyme, smoked paprika, salt, and pepper. Simmer until thickened. (for a little savoury trick, at a package of brown gravy mix and a 1/4 cup of water!)

  4. Transfer filling to a greased baking dish and spread the garlic mash on top.

  5. Bake at 375 °F (190 °C) for 25 minutes until golden on top.


🍮 Course Three: Mini Pumpkin Cheesecake Cups

Serves 4

Instructions

  1. Mix crushed gingersnaps with 2 tablespoons melted butter and press into 4 small jars or ramekins.

  2. Beat cream cheese with sugar until smooth. Add pumpkin purée, Greek yogurt, maple syrup, vanilla, and pumpkin pie spice; mix until creamy.

  3. Spoon mixture over the crusts and chill for at least 2 hours.

  4. Top with whipped cream and extra crumbs before serving.

  • Prep the cheesecakes a day ahead.

  • Toast bread slices and assemble the dip just before guests arrive.

  • Place the shepherd’s pie in the oven while enjoying the appetizer so dinner flows effortlessly.

  • Don't forget to grab a cute fall wine!
